Do the later timing covers from a V11 etc. fit the earlier big blocks like my 1979 1000G5? I am interested in the higher engine mount of the V11 timing cover for a project idea.

Yes,
I did it the other way around and used an older timing cover on a v11 ie motor to fit it into a tonti frame,
(had to trim the case about 5mm off the bottom edge to work with the bigger sump)
