I have a used caliper for my V7 850 which I bought as my brake pins are seized in. Found that the brake is pretty seized and corroded compared to the used one so want to replace it with the used one. I haven’t done brake calipers before, only thing I have done is fluid replacement quite a few times.What grease should I use on pistons and pins? And what washers, are these ok?

Grease etc: use brake fluid to lubricate the seals before and after fitting. Then protect the seals by building a wedge of red rubber grease (Sealey brake grease) around the piston. I would polish any sliding pins with 000wire wool then lubricate with rubber grease.
We used to put copaslip on the back of brake pads to stop brake squeal but not sure it worked and the less grease near a brake the better.

Red rubber grease maybe better than nothing for the caliper pins but if you get the calipers above 100C maybe not. There are specialised caliper pin greases out there which are happy to 200C and which are better for pressure resistance. Molykote G-3407 is my choice but hard to find in small quantities. Anything specified as caliper pin grease will be better than red rubber grease for the pins.
The copper washers to seal the brake hose banjo bolts are usually 10mm hole size rather than the 4mm you have shown above. If you are buying a seal kit for the caliper, that may well come with the copper washers as part of the kit.
I use Dowty washers in preference to copper washers. They are far more forgiving of that tiny piece of crud that you missed when cleaning the hydraulic surfaces.
I turned away from copper washers for hydraulic systems years ago when I had a Kawasaki K1100ST trike come in for a service and new wiring loom. The front brake lines were actually just finger tight on the master cylinder (you could move them really easily) but because someone had used Dowty washers, there was no leakage and the brakes were still perfect.
Silicone oil has the heat resistance and lube properties.
