V50 Monza - carbs/running issue?

My V50 Monza has had new pistons and heads replaced. Now that it is running again, it starts easily and runs initially on choke very well. But when the choke is turned off, the revs rise for a while, then drop, then the engine dies, regardless of trying to keep it running with the throttle.
I am sure that it must be something simple but I can’t figure it out.
Any ideas out there?

I would start by cleaning the carbs, paying particular attention to the pilot jet circuit.
Was it running fine before you took it apart and rebuilt it?

Sounds like not enough fuel? What about fuel filters inside the carbs. Also, some extra air leak may be possible. Are you sure you have fitted inlet alloy things tight? Is fuel tank clean, does it supply fuel well?

Sounds like the floats are not set correctly. You will need to remove the carbs, empty, and invert before removing the float bowls.
I use the “H” shaped setting tool shown in the factory manual. Bend the float arm tangs until the floats are at the correct height above the carb body flange.
It also sounds as if they are sticking: the rise in engine revs is probably the mixture going weak as the bowls empty. If the float pivot pin is stuck, the needle valve won’t open.
